Pina Colada Smoothie

1 to 1 ½ cups of coconut milk (We use So Delicious Original)
2 slices of Dole canned pineapple with about 1/8 cup of juice
1 banana (in frozen chunks)
½ to 1 tsp of ground flax seed/powder (optional)
Add all ingredients into a blender and puree until smooth. If
the blender gets stuck, add a little more coconut milk or water until the
smoothie reaches the desired consistency. 
You could also use whole milk or rice milk instead.  We’ve added mango and sometimes cantaloupe to
this smoothie before too.  One time we
ran out of bananas, so I made some mango, pineapple, coconut milk smoothies. 
These make great popsicles as they don’t stain!  We make these often. 
Go online to www.amazon.com and look at all the cool popsicle
molds.  The Annabel Kormel baby ones are
my favorite for babies, and the Kinderville silicon push up ones are my older
kids’ favorite.
