Hot Chocolate – Feingold Stage 1

We don’t drink hot chocolate too often but there are two times a year that we definitely do: The first snowfall of the year, and around Christmas time when we watch Polar Express. Polar Express is now my 7 year old’s favorite movie. Not sure if it’s because of the movie, or the hot chocolate. 🙂

This is just
the recipe off of the Hershey’s Cocoa box.
This makes 5-6 servings.

½ cup sugar
(I use organic from Costco or use C&H)

¼ cup
Hershey’s Cocoa (or organic cocoa)

Dash salt

1/3 cup hot
water

4 cups of
milk (we use Pacific rice milk or you can use water)

1 tsp
vanilla extract (watch for corn syrup and gluten if GF)

Mix sugar,
cocoa, and salt in saucepan.  Stir in
water.  Cook and stir over medium heat
until mixture boils.  Boil and stir 2
minutes.  Stir in milk and heat.  Do not boil the milk.  Remove from heat and add vanilla.

We sometimes
use with homemade marshmallows or with Elyon (corn syrup) or Dandie’s (soy) marshmallows from Whole Foods or
the health food store. The homemade marshmallows
melt quickly but my kids don’t mind. We use organic cocoa now. It tastes much better than the Hershey’s.

    • Hi Alison. We actually use an organic cocoa powder from Whole Foods now instead of Hershey’s but I still use the recipe from the Hershey’s box. The Hershey’s is considered acceptable on the Feingold Diet b/c it is without dyes, artificial flavors, or preservatives. It doesn’t make it all natural or the best option, just free of the Big 3. Thanks for the link!
