My friend made these and I couldn’t believe they didn’t contain any sugar or grains. These are very high in fiber and the cinnamon helps regulate blood sugar and appetite.
- 4 eggs
- 1 apple, peeled and diced small
- 1 cup apple sauce
- 1/2 cup coconut flour
- 1/4 cup of coconut oil, melted
- 1 TB cinnamon
- 1 tsp baking soda
- 1 tsp vanilla
- 2 TB honey
- 1/3 cup walnut pieces (optional)
Whisk eggs in a large bowl. Add the remaining ingredients and stir to combine. Bake at 400 degrees for 12-15 minutes. This makes 12 muffins.
